There are a variety of vegetables that provide similar items, the important thing is to pick vegetables from the area and season in which we find ourselves, then according to our taste, giving variety to our meals, testing different combinations and different ways of cooking.

Eating raw vegetables on a daily basis is very necessary, they provide more minerals and vitamins and its power purifying is more powerful.

In general we can say that vegetables provide water, vitamins, minerals, cellulose and carbohydrates

They are cleansing, help us to eliminate toxins from the body, detoxify and purifying the blood. 

We can group the vegetables depending on their type: 

  • Roots: natural sweetness, add depth, help us "keep our feet on the ground": carrots, onions, beets, turnips, radishes. 

  • Round: source of energy that calms and stabilizes the emotions: pumkins, all types of cabbage, cauliflower, brussels sprouts, courgette. 

  • Green leaf: fresh, bring lightness, relaxation, cleansing: Broccoli, Chinese cabbage, green beans, leek, celery, endive, lettuce, escalora, spring onion, borage, lettuce, dandelion.

  • Season: cold, disperse: cucumber, tomato, eggplant, peppers, mushrooms, asparagus, potatoes, artichokes, beets, spinach.
